Parse CSV as records

Quoted fields may contain commas and line breaks. Use a CSV parser rather than splitting text on commas or newlines. Preserve the header and encoding, check that every record has the expected number of fields, and distinguish a missing cell from an empty string. Export a small representative example alongside your schema.
